Whipped Ricotta Toast - 4 Ways

Whipped Ricotta on Toast (4 Ways) turns your regular morning toast into a gourmet treat with four tasty topping ideas.

Ingredients
 

  • 15 ounces whole milk ricotta cheese
  • 2 tablespoons olive oil
  • zest of 1 large lemon
  • ½ teaspoon salt
  • 12 slices toast of your choice

Honey

  • Honey
  • Lemon zest
  • Salt

Avocado

Prosciutto

  • Thin ribbons of prosciutto
  • Toasted chopped walnuts
  • Honey

Smoked Salmon

  • Thinly sliced smoked salmon
  • Capers
  • Sliced red onion
  • Lemon zest

Instructions
 

  • Add the ricotta, olive oil, lemon zest and salt to the bowl of a food processor.
  • Blend for a few minutes until whipped and fluffy.
  • Spread onto your choice of toast and serve. Alternatively, you can add your favorite toppings.

Honey

  • Spread the whipped ricotta over toasted bread. Drizzle honey and sprinkle lemon zest and salt over the top.

Avocado

  • Spread the whipped ricotta over toasted bread. Top with thinly sliced avocado, a sprinkle of Everything Bagel Seasoning and a drizzle of olive oil.

Prosciutto

  • Spread the whipped ricotta over toasted bread. Layer on thin ribbons of prosciutto and top with toasted chopped walnuts and a drizzle of honey.

Smoked Salmon

  • Spread the whipped ricotta over toasted bread. Add thinly sliced smoked salmon, capers, slivers of red onion and lemon zest over the top.
