Ingredients

  • 1 medium English cucumber
  • 2 cups Greek yogurt
  • 2 cloves garlic, grated
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon fresh mint, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Grate your cucumber using a box grater.
  • Squeeze all of the water out using cheese cloth or paper towels. You really want to get as much of the moisture out as possible, otherwise it can make your sauce watery.
  • Add the cucumber to a mixing bowl, then add in the remaining ingredients. Mix until well combined.
  • Cover and allow it to chill in the fridge for at least 1 hour. This will allow the flavors to meld.
  • Serve with your favorite raw veggies or pita.
