Slow Cooker Butternut Squash Soup

This Slow Cooker Butternut Squash Soup is velvety smooth, creamy, and infused with the rich, warm flavors of fall.

  • Peel and cut your butternut squash into large cubes and add them to a large mixing bowl. Peel and chop the carrot and onion into similar size pieces, then add them in the same bowl.
  • Add in the smashed garlic cloves and ginger. Sprinkle in the ground cinnamon, nutmeg, thyme, salt and pepper.
  • Toss to combine, then pour into your slow cooker insert along with the vegetable broth.
  • Cook on high for 3 hours or low for 6 hours, or until fork tender.
  • Transfer everything to a high-powered blender and puree until smooth. You might have to do it in 2 batches, depending on the size of your blender. Alternatively, you can use an immersion blender instead.
  • Pour the puree back into your slow cooker, then add in the coconut milk and maple syrup. Continue cooking for 10 minutes.
  • Serve with a drizzle of coconut milk over the top and (optional) pumpkin seeds and/or fresh thyme.

Recipe Notes

If you don't mind the sugar/carbs, you can use regular maple syrup instead of the sugar-free version that I use.
