Mediterranean Pasta Salad

Bursting with vibrant flavors and textures, this Mediterranean Pasta Salad is packed with crunchy veggies, creamy chickpeas, and a zesty homemade dressing.

Ingredients
 

For the Salad

  • 1 pound Cavatappi pasta, or other pasta
  • 15 ounce can chickpeas, drained and rinsed
  • ½ English cucumber, quartered
  • ½ cup cherry tomatoes, halved
  • ½ cup sun-dried tomatoes, packed in oil, oil reserved
  • cup feta cheese, crumbled
  • cup red onion, sliced
  • ¼ cup green olives
  • ¼ cup Kalamata olives
  • 2 tablespoons capers
  • 2 tablespoons fresh mint, chopped

For the Dressing

Instructions
 

  • Add all of the dressing ingredients into a salad dressing shaker. If you don’t have one, you can use a mixing bowl and whisk instead.
  • Shake or whisk until the dressing is well combined and emulsified, the chill it in the fridge while you prepare the salad.
  • Cook the pasta in salted boiling water, according to the directions one the box, then drain and rinse the pasta.
  • Add the pasta to a large mixing bowl.
  • Add the cucumber, halved tomatoes, olives, capers, sun-dried tomatoes and mint over the pasta.
  • Pour the dressing over the top.
  • Toss to combine, then add the crumbled feta cheese over the top.
  • Chill in the fridge for at least 1 hour or until you are ready to serve.
