Grilled Halloumi Salad

This Grilled Halloumi Salad is the perfect mix of crispy, creamy and fresh flavors tossed in a zesty homemade dressing.

Ingredients
 

For the Salad

  • 8 ounces Halloumi cheese
  • 5 ounces green leaf lettuce, or mixed greens
  • ½ English cucumber, cut into half moons
  • 1 cup cherry tomatoes, halved
  • cup red onions, thinly sliced
  • cup pignoli, pine nuts, toasted
  • 2 tablespoons fresh mint, chopped

For the Dressing

Instructions
 

  • Add the dressing ingredients into a salad dressing shaker. If you don’t have one, you can use a mixing bowl and whisk.
  • Shake until well combined and emulsified. Set aside while you make the salad.
  • Cut your halloumi cheese into slices. Brush your preheated grill pan or grill with olive oil, then grill for a few minutes on each side.
  • While your cheese is grilling, add the lettuce to a large salad bowl or platter.
  • Top with the cooled grilled halloumi. Add the cucumbers, tomatoes and red onions.
  • Pour the dressing over the top and add the toasted pine nuts and fresh mint, then serve.
