Ingredients
 

For the Salad

  • 2 English cucumbers, sliced thin
  • cup red onion, thinly sliced
  • ¼ cup pignoli, (pine nuts), toasted
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh mint, chopped

To Make the Salad

  • Wash, dry and slice the cucumbers thinly. Add the cucumbers to a large mixing bowl.
  • Cut the red onion into thin slices.
  • Add the red onion, toasted pine nuts, chopped dill, chives and mint in the bowl with the cucumbers.
  • Pour the dressing over the top. Toss to combine, making sure everything is coated with the dressing.
  • You can either serve immediately or chill it in the fridge for at least 1 hour to allow the flavors to meld before serving.
