Pour the Jasmine rice into a fine mesh sieve and rinse well under cold water until the water runs clear, then set aside.
Pour the rice, coconut milk, salt and sweetener into a saucepan and bring to a simmer.
Cover with a tight fitting lid and simmer for 15-17 minutes.
Remove from the heat and leave covered for 10 minutes.
Remove the lid, fluff with a fork and stir in the shredded coconut, (optional) chopped cilantro, lime juice and zest, then serve.
