Chicken Cordon Bleu Soup

This creamy and delicious Chicken Cordon Bleu Soup is made with tender chunks of ham and chicken simmered in a flavorful broth.

Ingredients
 

  • 2 cups rotisserie chicken, chopped
  • 1 ½ cups baked ham, chopped
  • 5 cups chicken broth
  • 5 ounces Gruyere cheese, shredded
  • 1 cup heavy cream
  • 2 ribs celery, chopped
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh thyme
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Heat a Dutch oven or large pot to medium and add in the butter.
  • Once melted, add in the onions, celery and half the salt. Sauté until tender, then add in the chopped ham.
  • Continue cooking until the ham is slightly caramelized, then add in the garlic.
  • Sauté for about 15 seconds, making sure not to brown the garlic. Stir in the chicken, fresh thyme, remaining salt and pepper.
  • Pour in the chicken broth, dijon mustard and heavy cream. Simmer for 15 minutes uncovered.
  • Add in the Gruyere cheese, then continue simmering for 5 more minutes or until slightly thickened.

Recipe Notes

If you can't find Gruyere cheese, you can use Swiss instead.
