Once melted, add in the shallots. Sauté for a few minute or until they just start to caramelize.
Add in the garlic and sauté for another 15 seconds, making sure not to brown it. Pour in the white wine and allow it to reduce by half.
Add in the heavy cream, fresh thyme, Worcestershire sauce and ground black pepper. Stir to combine, then add in the blue cheese.
Simmer for a 5-7 minutes, stirring often or until thickened to your liking. Serve warm over steak, chicken or pork.
Recipe Notes
If you'd rather not use white wine, you can use chicken or vegetable stock instead.I used Gorgonzola in this recipe, but any blue cheese that you like will work well too.
