Air Fryer Veggie Kebabs

These easy-to-make Air Fryer Veggie Kebabs are made with a colorful medley of deliciously seasoned veggies, skewered and cooked to perfection.

Ingredients
 

  • 8 ounces baby bella mushrooms
  • 1 medium zucchini
  • 1 cup cherry tomatoes
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • ½ red onion
  • 2 tablespoons olive oil
  • 1 ½ teaspoons herbs de province
  • ½ teaspoon garlic salt

Instructions
 

  • Preheat your air fryer @400°F for 5 minutes.
  • Cut the bell peppers and red onion into large pieces that are similar in size, then add them to a mixing bowl.
  • Wash, dry and slice the zucchini into rounds about ½” thick. Add them to the bowl with the onions and peppers.
  • Clean your mushrooms and tomatoes, then add them to the same bowl.
  • Drizzle the olive oil over the top, then sprinkle in the Herbs de Provence and garlic salt, then gently toss to combine. Make sure all the veggies are well coated.
  • Skewer the veggies alternating each type until all have been skewered.
  • Add in the skewered veggies in a single layer.
  • Air fry for 6-8 minutes or until cooked through.
