Air Fryer Greek Chicken Souvlaki

  • Cut the chicken into bite size pieces and add them to a bowl.
  • Add the olive oil, lemon juice, garlic, dijon mustard, dried oregano, salt and ground black pepper into a small mixing bowl. Whisk until well combined.
  • Pour most of the marinade over the chicken. Reserve about 2 tablespoons to brush on the chicken later.
  • Toss to combine, making sure all the chicken is coated in the marinade. Cover and refrigerate for 1 hour.
  • Prepare the Tzatziki sauce and refrigerate, allowing the flavors to meld while the chicken marinates. If using wooden skewers, this is also a good time to start soaking them in water, which helps prevent them from burning.
  • Preheat your air fryer for 5 minutes.
  • Add the chicken to the skewers, which should give you 6 skewers total.
  • Air fry at 400° for 13-15 minutes, or until the chicken reaches an internal temperature of at least 165°F when checked with a meat thermometer. Depending on the size of your air fryer basket, you might need to cook them in 2 batches.
  • Brush the reserved lemon garlic marinade over the chicken and serve with the Tzatziki sauce on the side.
