Peel and cut your butternut squash into large cubes and add them to a large mixing bowl.
Peel and chop the carrot and onion into similar size pieces, then add them in the same bowl.
Add in the smashed garlic cloves and ginger. Sprinkle in the ground cinnamon, nutmeg, thyme, salt and pepper.
Toss to combine, then pour into your slow cooker insert along with the vegetable broth.
Cook on high for 3 hours or low for 6 hours, or until for tender.
Transfer everything to a high-powered blender and puree until smooth. You might have to do it in 2 batches, depending on the size of your blender. Alternatively, you can use an immersion blender instead.
Pour the puree back into your slow cooker, then add in the coconut milk and maple syrup.
Continue cooking for 10 minutes.
