Shake or whisk until the dressing is well combined and emulsified, then chill it in the fridge while you prepare the salad.
Cook the pasta in salted boiling water, according to the directions on the box, then drain and rinse the pasta. Add the pasta to a large mixing bowl.
Add the cucumber, halved tomatoes, olives, capers, sun-dried tomatoes and mint over the pasta.
Pour the dressing over the top.
Toss to combine, then add the crumbled feta cheese over the top.
