These carrots are so quick and easy to prepare and are perfect with just about any protein. Carrots are cut into bite size pieces, steamed and tossed in a sweet buttery honey maple sauce that gives them incredible flavor.

- Coconut sugar (or brown sugar)
- Honey

🔪 How to Make Honey Glazed Carrots
Wash, dry and slice your carrots into bite size pieces.
Heat a large skillet (with a lid) to high heat and bring to a boil.
Once the water is simmering, add in the carrots and reduce the heat to medium-low. Cover and simmer for 8-10 minutes or until they are fork tender. You’re only using a small amount of water so that the carrots steam, rather than boil.
When they are ready, all of the water should be gone, but if any remains, drain it off. Pour the carrots into a bowl and set them aside.
Using the same skillet, add in the butter and once melted, add in the garlic. Allow to sauté for 15 seconds, making sure not to brown it. Then add in the coconut (or brown) sugar, maple syrup, honey and ground cinnamon.
Simmer on low for just a minute or so until the mixture has thickened, then pour the carrots back in.
Gently toss in the glaze until heated through. Add in the parsley, then allow to cool slightly before serving.
💡 Tips
- You'll want to make sure the carrots are all cut the same size. This will help them all cook consistently and not have some over or under cooked.
- You might be tempted to use more water, but then instead of steaming the carrots, you'd be boiling them.
- While you can boil the carrots instead of steaming them, they might become too soft or waterlogged which you don't want with this recipe. The glaze might get watery, rather than thick and sticky.
- You can partially prepare these carrots ahead of time simply by steaming the carrots, store them in the fridge until you're ready, then make the glaze and toss in the carrots.
- Don't overcook the carrots, you want them tender but not mushy or falling apart.

- If you're pressed for time, you. can buy the whole baby carrots and use them instead. They are already washed, peeled and ready to use.
- If you're trying watch your sugar intake, you can use a sugar-free honey instead of regular honey.
- You can also use a sugar-free maple syrup instead of traditional maple syrup.
- If you can't find coconut sugar you can use brown or granulated sugar. Monk fruit/allulose is a better choice, if you're trying cut back on sugar and carbs.
- If you're out of fresh parsley, you can substitute with 1 teaspoon of fresh thyme. It will change the flavor slightly, but will still be delicious!
