To Make the Dressing
Add the dressing ingredients in a salad dressing shaker cup.
Shake until well combined and emulsified, then set aside.
To Make the Salad
Wash, dry and slice the cucumbers thinly.
Add the cucumbers to a large mixing bowl.
Cut the red onion into thin slices.
Add the red onion, toasted pine nuts, chopped dill, chives and mint in the bowl with the cucumbers.
Pour the dressing over the top.
Toss to combine, making sure everything is coated with the dressing.
You can either serve immediately or chill it in the fridge for at least 1 hour to allow the flavors to meld before serving.

Ingredients
For the Salad
- 2 English cucumbers, sliced thin
- ⅓ cup red onion, thinly sliced
- ¼ cup pignoli, (pine nuts), toasted
- 1 tablespoon fresh dill
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh mint, chopped
For the Dressing
- ¼ cup apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon sugar-free honey, (or Agave if Vegan, or honey if not low carb)
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
To Make the Dressing
- Add the dressing ingredients in a salad dressing shaker cup.
