- Spring mixed greens
- Baby pickled beets
- Mandarin oranges
- Walnuts
- Red onion

🔪 How to Make Pickled Beet Salad
To Make the Raspberry Vinaigrette
Add all of the dressing ingredients in the cup of a bullet blender.
Blend until well combined and emulsified. Then set aside, while you prepare the salad.
To Make the Beet Salad
Add the mixed greens to a large salad bowl.
Slice the pickled beets in half. Just a warning, if you’ve never worked with beets before.. THEY STAIN! So use a cutting board that you aren’t worried about it staining and be sure to immediately wipe up any of the juice that might get on your counter or anything else you don’t want stained.
Add the sliced beets, mandarin oranges, sliced red onion, toasted walnuts and goat cheese over the mixed greens.
Right before serving, pour the dressing over the top and toss to combine.
💡 Top Tip for Working with Beets
If you’ve never worked with beets before, you should know they stain!!! In fact, beets were used years ago as a way to dye fabric. That's why I recommend wearing disposable kitchen gloves to prevent staining on your hands.
You'll also want to use a cutting board that you aren’t worried about staining. Be sure to immediately wipe up any of the juice that might get on your counter or anything else you don’t want stained. A vinegar and baking soda mixture can help with the clean up.
