Every year my wonderful Oma would send over packets of Chocolate Lebkuchen cookies and Pffernussen for our Christmas treats along with a Stollen.

Lebkuchen wasn't available back then in the supermarket but we can usually find them there starting from early November! I do find myself buying them too but it is always lovely to bake your own if you can.
What is Lebkuchen
Lebkuchen is a traditional soft, moist, honey-sweetened German biscuit/cookie which has a lovely warm, spiced taste. Traditionally eaten during the Christmas period, they are a wonderfully delicious tea time treat.
They are really quick and easy to make. A simple dough recipe with added ground almonds and a selection of store cupboard Christmas warming spices.
They make lovely Christmas gifts too, press the dough into different shapes. lightly ice or coat in chocolate and present in a box.

Our version of Chocolate Lebkuchen cookies are egg-free and refined sugar-free.
How long will Lebkuchen cookies keep?
Kept in a cake tin, Lebkuchen cookies should keep for a few days. If they do start to harden, they are still always great dunked into tea or coffee!
Ingredients needed for Chocolate Lebkuchen Cookies
- plain flour
- ground almonds
- ground ginger
- ground cinnamon
- ground cloves
- ground nutmeg
- or use our Gingerbread Spice Mix in place of the 4 spices above.
- cocoa powder
- baking powder
- bicarbonate of soda
- clear honey
- butter
- plain chocolate
How to make Chocolate Lebkuchen Cookies
- First combine the flour, ground almonds, ginger, cinnamon, cloves and nutmeg spices, cocoa powder, baking powder and bicarbonate of soda into large bowl.
- Melt the butter and the honey over a low heat, stir until the butter melts. Take off the heat and allow to cool a little.
- Pour the butter/honey mix into the dry ingredients and combine well to form a stiff dough.
- Heat your oven now to 180C/160C Fan/Gas 4.
- Shape the dough into small golf ball sized balls. This recipe makes 11 larger Lebkuchen cookies, halve the size of the balls to double up and make smaller Lebkuchen.
- Place on a lined baking tray, well spaced apart. (I use a macaron pan as it makes lovely round Lebkuchen cookies).
- Flatten each piece of dough to make a round biscuit/cookie shape.
- Bake for 15 minutes. Don't over bake as the cookies should have soft centre.
- Cool on a wire rack.
- Break the chocolate into pieces and place into a bowl over simmering water. Stir until the chocolate has gently melted.
- Either dip the Lebkuchen cookies into the chocolate and half dip or spoon the chocolate over them.
- Leave the cookies to set on a wire rack.

Chocolate Lebkuchen Cookies
Ingredients
- 225 grams plain flour
- 50 grams ground almonds
- 2 teaspoons ground ginger
- 1½ teaspoons ground cinnamon
- ½ teaspoon of ground cloves
- ¼ teaspoon of ground nutmeg
- 3 teaspoons cocoa powder
- 1 teaspoons baking powder
- ½ teaspoon bicarbonate of soda
- 150 grams honey
- 80 grams butter
- 150 g plain chocolate
Instructions
- Combine the flour, ground almonds, ground ginger, cinnamon, cloves, nutmeg, cocoa powder, baking powder and bicarbonate of soda into a medium sized bowl.
- Melt the butter and honey in a pan over a low heat, stirring until the butter melts. Take off the heat and allow to cool.
- Pour the honey butter mixture over the dry ingredients and mix well to make a stiff dough.
- Heat your oven now to 180 C/160 C fan/gas 4.
- Shape the dough into small golf ball sized balls. Place on a lined baking tray, well spaced apart. (I used my macaron pans which make a perfect round shape). Flatten each one to make a round cookie.
- Bake for about 15 minutes, then cool on a wire rack.
- Break the chocolate into pieces and place in a bowl over simmering water, heat gently. When melted dip the cooled cookies into the chocolate to half coat or spoon the chocolate over.
- Place the cookies on a wire rack to set.

Ooh my goodness these look wonderful. I love lebkucken, but haven't tried making my own - yet! Using your macaroon pans is a very good tip for keeping a good shape, not that I have any.
